Asian Air-Fryer Salmon Bites, Broccoli & Rice Bowls
Serves 2
Ingredients:
12 ounces wild king salmon, skin removed and cut into large cubes
2 tablespoons coconut aminos, tamari or soy sauce
1 tablespoon raw honey
2 teaspoons white rice vinegar
1 teaspoon toasted sesame oil
½ teaspoon red pepper chili flakes
½ cup Jasmine rice, dry
2 cups broccoli, chopped into florets
Sprinkle of white or black sesame seeds
Directions:
1. In a bowl, whisk together the coconut aminos/tamari/soy sauce, raw honey, rice vinegar, toasted sesame oil, and chili flakes. Add the salmon, stir, and let it sit in the marinade for about 15-20 minutes.
2. While the salmon is marinading, cook the Jasmine rice according to the package directions. Once done, turn off heat & cover to keep to warm.
3. Preheat the air fryer to 400ºF. Transfer the salmon bites to the air fryer basket and bake for seven to eight minutes or until cooked through, shaking halfway through. Depending on thickness of salmon pieces and your air-fryer, you might need to add a few minutes.
4. Meanwhile, set the broccoli florets in a steamer over boiling water and cover. Steam for about five minutes or until tender.
5. Divide the rice, salmon, and broccoli evenly between bowls. Top the salmon with sesame seeds and enjoy!
